Temperatures are guidelines
Cooking time depends on thickness, starting temperature, airflow and thermometer accuracy. Always measure in the thickest part.
Fire and flashback
Use the kamado outdoors on a stable surface. Burp a hot kamado before opening it fully and never pour water into hot ceramics.
Hygiene and allergens
Keep raw and cooked food separate. Check every packaged ingredient, marinade and rub for allergens.
