Temperature keeps rising

Close the lower vent in small steps and allow 10 to 15 minutes for each adjustment. A kamado responds slowly, so avoid large corrections.

White or bitter smoke

Wait until the charcoal burns cleanly and the smoke becomes thin and almost transparent before adding food.

Direct or indirect heat

Use direct heat for fast grilling. Add the heat shield for longer cooks, larger cuts and recipes that need oven-like heat.
