    Step 1

    Remove the membrane and season the ribs.

    Smoke bone-side down for 2½ hours.

    Step 3

    Wrap with apple juice and butter and cook for another 1½ hours.

    Glaze and allow to caramelise for 30–45 minutes.

Firemaster tip

Open the lid as little as possible and control the heat with the vents. Stable heat gives a more predictable and juicy result.
