Method

Step 1
Coat the pork with mustard and rub, then refrigerate overnight.

Smoke until the core reaches about 72°C and a firm bark has formed.

Wrap with the apple juice and butter, then cook to 92–95°C.

Step 4
Rest for 1 hour and pull the meat, mixing it with the cooking juices.
Firemaster tip
Open the lid as little as possible and control the heat with the vents. Stable heat gives a more predictable and juicy result.
