The cedar plank protects the fish from direct heat and adds an elegant smoky flavour.

Method

Step 1
Soak the plank in water for at least 45 minutes.

Brush the salmon with oil, honey, lemon zest, salt and pepper.

Cook indirectly with the lid closed.

Remove at a core temperature of 48–50°C and finish with dill.
Firemaster tip
Open the lid as little as possible and control the heat with the vents. Stable heat gives a more predictable and juicy result.
